Latvians in Bergen ferment cabbage for shared celebrations

“Cabbage fermenting bee in Bergen.
When the crisp scent of autumn cabbage fills the air, the Board of the Latvian Society in Bergen gathered with warm hearts and eager hands to take on the challenge of fermenting a full 100 kilograms of cabbage. Their goal was clear: to ensure that the festive table would offer not only joy but also a true taste of Latvian tradition.
The cabbage fermenting was led by Ingūna Keiša, and as tradition demands, everything was prepared properly – coarse salt, aromatic caraway seeds, and the right spirit of teamwork, just as in the old Latvian way. Within three hours, two kinds of sauerkraut were made: one for quick enjoyment before Christmas, and another for longer storage, lasting all the way to the summer solstice.
The work went smoothly and joyfully – everyone chatted about upcoming events and future plans, and from time to time, lines from folk songs echoed through the room, perfectly fitting the lively spirit of the bee:
“Eyes may tire of work,
hands never will.
Hands never fear the task,
they know how to get it done.”
This cabbage-fermenting bee was not just an afternoon of work, but also a celebration of togetherness and Latvian identity – because the tastiest sauerkraut is always made with joy and friendship.
All Latvians in Bergen who attend the society’s events – whether on Latvia’s national holiday or during the summer solstice – will have the chance to taste the delicious results of this bee!”
